Cajun cooking at its best from the Junior league of Lafayette. I'm from South Louisiana and this is the absolute best cookbook if you're interested in learning to cook cajun (not creole -- there's a big difference!) I'm on about my fourth copy and it's still my most dogeared cookbook on my rack. Gumbos, roux, sauce piquante, couch-couch, ... it's all here!
